Ma Bui’s Bahamian Delight
When we caught up with Ma Bui’s at Global Gallery Coffee Shop over the weekend, fresh off of a busy run to Old Worthington Market Day, it was clear that what was left was what didn’t sell earlier in the day. What soon became clear was that those marketgoers left some good choices for us.
Though we’ll have to wait to try Ma Bui’s signature conch fritters, the food truck’s Island Spice Rub Grilled Chicken more than filled the gap with perfect charcoal-grilled char, tender dark meat and a pleasantly understated but complementary spicing.


The Bahamian truck’s deep-fried grouper also charmed us with a light batter and restrained saucing that let the buttery flavor and flaky texture of the fish shine through.
Off-the-menu grilled rib tips were a truly pleasant surprise, lacquered with a sauce that brought a hint of sweetness, a hint of tang and a complex mix of flavors that I haven’t encountered before but hope to again soon.
